Breakfast Casserole – The Recipe

I’ve got the perfect recipe for an upcoming work week or a weekend brunch.  This breakfast casserole is super easy to make, low prep and super tasty!
breakfast-casserole

What You’ll Need:
– 12 oz. reduced-fat bulk pork sausage
– 1 medium sized onion, chopped
– 2 eggs
– 4 egg whites
– 2 cups fat-free milk (I used almond milk)
– 1.5 teaspoons of ground mustard
– 1 teaspoon salt & pepper
– 8 slices of white bread, cubed
– 2 cups (8oz) of shredded cheddar

Step-by-Step:
1. Cook the sausage and chopped onion in a nonstick skillet over medium heat.  Cook until sausage is no longer pink, drain and cool.
2. In large bowl, beat the eggs, egg whites, milk, mustard, salt and pepper together.  Stir in the cubed bread, cheese, sausage and onion mixture. Pour into 13 x 9-inch baking dish (coated with baking spray).
3. Cool and refrigerator (okay over night).
4. Remove from fridge for 30-minutes before baking.
5. Bake, uncovered at 350-degrees for 35-40 minutes, or until a knife inserted comes clean from the center.  Let stand for 5-minutes before cutting and enjoying.

If you want to make a veggie option; switch out the meat and add in some of your favorite veggies like mushrooms, tomatoes or spinach.  Just be careful to drain appropriately as it will get watered down a bit more so may want to bake a bit longer than the recommended pork version.  Whip up a Bloody Mary or mimosas and enjoy!

Enjoy!

5 Reasons To Host a Fall Party

If you don’t have an upcoming fall party planned, I highly recommend getting something in the books whether it’s later this month or into early November. And if you’re not convinced why you should be hosting a fall party… or that it can be SUPER easy, let me tell you how. reasons-to-host-a-fall-partyBrunch & Football – Throwing together a football brunch can be really easy too, with a magic thing called breakfast casserole (recipe to come)! Most of the prep for a breakfast casserole is the night ahead, so all you have to do the morning of is throw it in the oven.  Have a TV with football? Boom, turn it on and grab some mimosas or bloody mary makings and your set for a day of drinking, friends and football – check out our brunch last fall.

Chili – I’ll be sharing my mom’s delicious chili recipe (that I’ve adopted overtime) on an upcoming post.  But as long as you have a killer recipe, a box or two of cornbread and a crockpot, all you need to do is throw the ingredients together in the morning and by mid-afternoon or by dinner time you’ll have a delicious, easy to serve, low mess and matience dish for your guests!  Have some friends bring some beers and dessert and you’ve got a low key night. Light some candles, start a fire and pull out some games and you’ve got a fun night ahead of you.

Pumpkin Beers – Literally craft a party around pumpkins beers (or harvest blends).  Have your guests bring a six pack or two, and let the tasting begin.  You could even create score cards and a rating system for everyone to weigh in.

Breweries or New Spots –  Don’t want to host something at your house? Plan a gathering at a local pub or a new brewery with your favorites.  Not only will there be no mess to clean up at the end of the night, but you’ll be able to try something new or enjoy a fan favorite.  Then end the night with a bonfire back at your house!

Pie Baking – Have a girls afternoon and bake some pies! Pop open some wine or rose, share some recipes and bake some yummy pies or fall favorites to work out the kinks for upcoming holiday celebrations!

The summer’s are always so busy so try and catch-up with friends now before the holiday craze starts up again! You don’t need to be too elaborate or overthink your upcoming fall party, it can be easy, low key and affordable!

Avocado Eggs – The Recipe

I’ve always seen the pictures on Pinterest of eggs cooked in avocados, and thought two things:

1. YUM
2. That looks like too much work

Well I was right about only one of those statements, YUM.  These guys are super easy to make so follow along and prepare to be amazed and so happy you tried something new.

What You’ll Need:
– Ripe Avocados (a little squishy)
– Eggs
– Muffin Pan
– Any other toppings; sriracha sauce, bacon bits, tomatoes,  onion… the options are endless.

Step-by-Step:

  1. Cut your avocado in half and remove the pit.  Next scope out more of the center to create a little nook for your egg.
  2. Place your eggs in the muffin pan so they rest and are secure, then crack an egg into each of your avocado halves. The egg will probably overflow a little bit, that’s OK.
  3. Add any seasonings or extra toppings, carefully, and then place carefully into the oven. You’ll want it at 450 and you’ll cook for at least 15 minutes.  Once 15-minutes is up check to see if it’s still gooey, if so, throw in for another 2-minutes, you might have to repeat this a few times – at least we have too.
  4. Let cool and then scoop out of the skin or eat from the skin and enjoy! It’s great by itself or enjoy on a salad like we often do for dinner.

We usually make these for dinner but these would be awesome with a side of bacon and some toast on a weekend morning and a warm cup of joe!

Enjoy!

Manhattans – The Recipe

It’s Friday my friends, and the nights are starting to get cooler – so I’ve got the perfect, classic drink for all of you – Manhattans.

Manhattans hold a special meaning to my family, it’s become our little family staple drink in order to remember my Grandma, Marilyn – it was definitely her drink.  Manhattans are a bit strong, depending on your level of taste, but oh so good once you acquire a taste for them.  I’m going to share my recipe – although I feel like there are a few variations you can do to mix it up.

What You’ll Need:

1. Whiskey – I prefer Makers Mark
2. Sweet Vermouth
3. Cherries
4. Bitters – Optional
5. Ice

img_6206
Directions: First get lots of ice cubes in your glass, get a shot glass (big or small) and pour in your sweet vermouth – 1 full shot.  Next pour in equal amounts of the Makers Mark, from there you can add a cherry or two for garnish and a splash, or pour of cherry juice. I don’t like adding bitters, but is definitely on some recipes. As you can see I even have Manhattans recipe napkins that were an awesome find at Marshalls – but have a totally different recipe.

Once you’ve mixed your drink to perfection and give it a good stir, be sure to cheers before taking your first sip! And if you have nothing to cheers for, cheers to Marilyn!

Cheers to Marilyn!

Latest Obsessions: August Edition

Starting out on the first Friday of August, here’s what I am obsessed with lately!  Even though it seems like summer is coming to an end, it still feels like we are just getting started and have a lot more hot days and weekends to enjoy! So I hope you enjoy and share in some of these latest obsessions.

Kate Spade: Outdoor & Home
I first saw some of these gems at a Hallmark on steroids on our Denver trip.  It was the Hallmark location in Cherry Creek. And it was amazing! I also thought the plastic cups with fun lemon patterns, polka dots and other bright patterned pieces were perfect, especially for summer. I don’t know if I would actually spend the money on these, but I feel like everyone needs a good set of entertaining plastics ‘glasses’ or wine glasses.  And everything else is just too cute and perfect to keep summer lasting!

Our Engagement Pictures
We have been getting teased with small batches of our engagement pictures since we first had them done in mid-June.  It’s been a little torturous waiting to see what the rest look like after getting teased with the first 5 and then a week later 5 more… but they have definitely been worth the wait! I received the latest batch of the most current and I honestly can’t stop staring at them. I’m a hypocrite for mocking every other bride-to-be who posted a million engagement pictures one right after the other on social… so I am definitely pacing myself from blasting them all! So you all get the first peak of the next batch. *smiles*

Silver Picture Frames
Sooo… Marshall’s has been killing it with elegant, classic silver frames lately.  I first bought a few for my mom and FMIL to give them a picture of when B and I got engaged, but now that we have these awesome engagement photos coming in I need more! The pictures just pop in the frames whether its a color or  black & white photo. I was half tempted to buy all new frames for our living room, but quickly realized that was a bit ridiculous … but maybe it’ll still happen.

What’ve you been obsessing over lately? Leave a comment below & let me know!

TGIF!

Christmas in July Party

Confession! I love Christmas!! And what better than to have an excuse to pull out some decorations, drink some Christmas Ale and have a bunch of your friends over, than Christmas in July!  This upcoming Monday is officially 6-months until Christmas, so next week and weekend are an excuse to throw a party. If you haven’t made this a tradition yet, I highly recommend it, regardless of how all out you go!

Here is your go-to guide for everything you’ll need to throw an epic Christmas in July party this year!

Food/Snacks:  The best part about all of these ideas is that they’re easy, a little healthy and super cute! You can also do a cheese spread in the shape of a tree or a wreath. Also bust out those Christmas cookie receipts and make some good ol’ cut outs or peanut butter cup cookies, they’ll be a hit.

Drinks: Our local breweries always release some of their Christmas Ale’s around this time, so it’s definitely a treat and fun to snag a glass or 6-pack. Add a cinnamon sugar rim to your glasses for an extra treat for you and your guests! Next up, red and green jello shots – yup! It’s a must, not to mention easy and refreshing, and perfect for your Christmas in July festivities. I like to serve with pop-rocks poured on top, so yummy.  Last but not least, find a punch that is both refreshing and light but still hits those Christmas sentiments you love – like this Cranberry Orange Punch, make in bulk and you’re ready for a fun night.

Decor: Have some old Christmas wrapping paper that you’re sick of seeing every year? Wrap some empty boxes as accents around your space.  Pull out some colored lights and string them up in the back yard, garage, or shrubbery.  No need to go crazy here, any other lawn ornaments that’re sitting around put them on prime display!

Dress Code: Asking that your guests dress in red and green or even throwing on an ugly Christmas sweater helps make this party an event.  If it’s mostly couples you can request that each couple comes as a “Christmas Couple” an excuse to get creative!

Details: This is when Pandora really comes in handy, click on your favorite holiday tunes station (mine is, Mariah Carey Christmas) and the mood will truly be set! You can also play a favorite Christmas movie on repeat, either in the house or out in the garage – Elf and Home Alone never get old.  Finally, napkins, plates, and cups that are red and green help add to the theme without breaking the bank – check the Dollar Tree!

Remember all of these things will really bring your Christmas in July theme to life while being able to enjoy a cold Christmas Ale on a hot summer day and all your nearest and dearest by starting a new tradition!

Happy Christmas in July!!

Travel: Denver Recap – Part 3

The true reason for our long weekend trip to Denver was to celebrate B’s cousin’s wedding! The bride, Lauren is from the Denver area, and they recently moved there within the last 2-years, so most of B’s family had to travel in for the nuptials.

Wedding festivities kicked off with a welcome reception hosted at Tivoli Brewing Co. the outdoor patio space was the perfect spot for a warm night with gorgeous views of the city. This was the first time we got to see a lot of B’s family since arriving Thursday morning.  So it was good to see everyone and start celebrating Lauren and Jensen. The food and beverages were flowing and we easily helped shut the night down, being literally the last two to leave. *smiles*

Saturday, July 9 – the big day was finally here! We were taken to the ceremony location by commercial buses from the main hotel.  The setting for the ceremony was a beautiful, Grecian Parthenon found surrounded by trees in a park in the center of the urban setting, in Cheesman Park. It was a toasty afternoon and the sun was shining bright by the time the ceremony was supposed to start. The setting was beautiful and the decor elements were simple yet made a statement. Their officiant was a close family friend, which made the ceremony personal and unique to Lauren and Jensen’s relationship.  They also shared their own vows, with a blubbering groom. You could see how happy they both were.

The reception was at a venue called Mile High Station. It was an old warehouse/depot like place that was refurbished with a modern industrial feel. The introduction of the parents, bridal party, and newlyweds was a unique one – allowing the guests to get a birds-eye view of everything from the happy hour space above the main reception area. Dinner was family style BBQ, mac n’ cheese, beans, salad, and portabella mushrooms. Desserts were mini cheesecakes, a salted caramel brownie and an original strawberry flavor and a doughnut wall I resisted! Pretty soon the dancing commenced! B was showing off his dance moves, apparently his family hasn’t seen him dance much! Luckily he danced the night away with me!!

Lauren was a beautiful bride, there was so much love not only between Lauren and Jensen but all of their friends and family that supported and were involved in their special day. This was our last wedding of 2016 and it sure was a good one, it was a reminder that our planning is going to start kicking up soon, and it’ll be B and I on our big day before we know it! (crazy!!)

July 4th Sangria – The Recipe

Happy 4th of July my friends!!

I’ve got a fun, easy drink for all of you whether you’re leisurely enjoying the day by the pool, just hanging out with friends or headed to a cookout and want to bring something fun! July 4th Sangria - the bee life
Get a big pitcher, and throw your cut strawberries in and then the blueberries over top. From there add the half cup of lemon juice (bottled or fresh squeezed), next pour your triple sec over top.  Then add the white wine, I opted for a pinot grigio, top off with some club soda and watch the magic happen!  Garnish with some strawberries and enjoy this light summery drink with some good friends!

Cheers, to America and some good sangria!

Fun Hangover.

This week has been crazy with a side of ridiculous. Since Sunday night’s victory of the Cavs winning the NBA Finals, setting a number of records and making history, this city has been non-stop, myself included!

Monday it was like Christmas, waking up reliving everything, being so happy, and just soaking in all the coverage, the players tweets, party photos, snaps, replaying the last few seconds of the game and going through all the emotions over and over again. Not to mention, the Cavs came home so there was a welcome party that of course we had to watch as they got off the plane.  Tuesday seemed like the calm before the storm, but also crazy just getting ready for Wednesday and trying to plan and guess how the parade would be – as it was a first for many, if not all.

Wednesday was the Cavs parade. The first championship parade this city has seen in nearly five decades. The estimates of how many people who were expected to cram into downtown were anywhere from 500,000 to 1 million.  Well there was a reported approx. 1.3 million people who came down to Cleveland for the parade. People who started arriving downtown at 6AM (if they hadn’t spent the night), waiting for the parade which didn’t start until 11AM, and ended up taking four hours.

We decided to get downtown pretty early since we saw on the news that the crowds were growing fairly fast, at least quicker than we anticipated. Luckily working downtown, we had a parking spot secure in my lot and then we headed to a coworkers apartment near by for some pre-gaming fun. We slowly recruited other coworkers to head over from the office, since the city was packed and celebrating the Cavs!

It was so much fun. I love my coworkers and it was fun to party and hang with them, with B too and some of our other friends. It was also bitter sweet since my last day at the office is today. I’ve made awesome friends and that will be the hardest party of leaving, is not seeing them everyday, all day (but we will still be close!) So I know we will all still stay close.

Because the parade took so long, we didn’t last to see much in person, we waited at the end of the Rally, thinking that was going to be the grand finale and party, but it was a little lack luster.  Apparently the parade was where it was at! So we should’ve started at the beginning! Oh well, it was still so much fun, an experience we will never forget, a part of history, an awesome party and amazing day for our city.

Go Cavs!!!
